Ingredients

  • 1 kg aubergines
  • 50 g feta
  • 2 cloves of garlic
  • 200 ml olive oil
  • 1 lemon
  • 1 tbsp breadcrumbs
  • A little parsley
  • Salt

Instructions

  • Pierce the aubergines with a fork. Bake for 30 minutes and peel them when cooled.


    Run them in a blender along with feta cheese and lemon juice. Add a little olive oil at a time, then stir in the garlic, salt and bread crumbs.


    Served in a salad bowl and garnished with olives and parsley.
