- 1 kg aubergines
- 50 g feta
- 2 cloves of garlic
- 200 ml olive oil
- 1 lemon
- 1 tbsp breadcrumbs
- A little parsley
Pierce the aubergines with a fork. Bake for 30 minutes and peel them when cooled.
Run them in a blender along with feta cheese and lemon juice. Add a little olive oil at a time, then stir in the garlic, salt and bread crumbs.
Served in a salad bowl and garnished with olives and parsley.
